Remy Ruiz, the heart behind The Praline Cauldron, was born in 1984 in Saint-Étienne, France, just 40 miles from the gastronomic capital of Lyon. Raised in a culinary family, with a mother who cooked and a father who was a pastry chef, Remy’s path was clear from a young age. By 16, he began his journey in the French pastry world, earning multiple diplomas and sharpening his craft.

Throughout his career, Remy has worked as an executive chef in France, Québec, the U.S., Saint-Martin, the Caribbean, southern Corsica, and more. He also ran a renowned bakery-pastry shop for 10 years on the “Main Street” of his hometown in Saint-Étienne.

Remy’s vision blends tradition and innovation. He honors classic techniques while bringing a modern, artistic, and minimalist touch to each creation. His focus is always on excellence, not just “good enough.” He avoids shortcuts, additives, or ready-made products, and instead emphasizes fresh, natural ingredients, clean, organized craftsmanship, and refined creativity.
